Chocolate Banana Bread

- Ripe bananas, peeled

- Caster sugar
- 250g
- Plain flour, sifted
- 50g
- Cocoa powder, sifted
- 15g
- Baking powder, sifted

- Cinnamon
- 80ml
- Olive oil
- 100ml
- Milk
- 3
- Eggs
- 10g
- Vanilla bean paste
- 1
- Pinch of sea salt
TO DECORATE (OPTIONAL)

- Milk chocolate buttons
- 30g
- Dark chocolate buttons
How To make it
- Remove cookie dough from the tub and place in the freezer to firm up.
- Preheat the oven to 155°C fan-forced. Line a 30cm x 12cm loaf tin with baking paper, allow the paper to slightly overhang
- In a large bowl, whisk together the bananas and sugar till all combined and bananas have broken down. Add all the dry ingredients and mix until combined.
- Gradually add all the wet ingredients and the sea salt and mix until combined. Grate the frozen cookie dough and fold through the banana bread mixture.
- Pour mixture into the prepared tray and bake for 80 minutes or until a skewer inserted in the centre comes out clean.
- Allow banana bread to cool slightly in the tin, then remove from the tin and transfer to a wire rack. Top with milk and dark chocolate buttons (if you’re using them) and slice to serve.
Cookie tips
- Wrap this banana bread in plastic wrap and freeze it.
- Add extra chocolate chips to the banana bread mixture, and top the batter with a banana, sliced lengthways, before baking.
- Microwave banana bread slices for 10-15 seconds and serve warm.
