COOKIE BROWNIE

How To make it
TO ASSEMBLE & BAKE
- 1. Preheat the oven to 150°C. Line a 20cm x 20cm square tin with baking paper.
- 2. Press cookie dough into the base of the prepared tin, trying to make it as flat as possible.
- 3. To make the brownie, place eggs and sugars in the bowl of an electric stand mixer (or you can use a hand mixer). Using the whisk attachment, whisk until pale.
- 4. Fold through the flour and cocoa and fold to combine, then mix in the melted butter.
- 5. Gently fold in the chopped chocolates and sea salt, then pour the brownie batter over the cookie base.
- 6. Bake for 60 minutes until the brownie is firm and does not wobble. Cool in the tin completely before removing and slicing to serve.
Cookie tips
- Brownie can be baked and then frozen
- Over-baking dries out the brownie, and under-baking means the surface will crack
- Can add other ingredients to the brownie batter like nuts or white chocolate
